Not what I expected
Nowhere in the description given for the book does it say that it's not for benchtop convection ovens. I thought it would cover all convection ovens. Dissapointed as I can't seem to find a book with recipes and instructions for the benchtop variety and mine didn't come with instructions. Probably perfect if you have a normal convection oven but useless for me. In her intro she mentions that she did write a book for benchtop convection ovens, pity she didn't mention that on the back cover, I could have saved time and money.

This cookbook is exactly what was needed to understand the use of our convection oven. Cooking anything in this oven never came out as satisfactory as a regular oven until buying this book. Basically, it teaches the methods of cooking at different temperatures that gives the results expected. For example, cooking chicken on temperatures used in regular ovens does not work in a convection oven. The temperatures have to be adjusted to get the proper browning in a convection oven and the book helps to understand that basic. At first, high temps recommended seemed too high; but in watching carefully during the cooking process, it worked. The chicken was beautifully browned, tender and juicy. The book also gives ideas on what to serve with the meats, etc. This has been a very beneficial book to this family and now we are comfortable in using the convection oven knowing it will give the results we expect. You can learn to adjust your favorite recipes to conform to the temps of the convection oven. As usual, Amazon was prompt with the delivery of this item.

My favorite new cookbook
I first found Cooking With Convection in my local library. I loved it so much, I had to have it! I have tried several of the recipes "as is" and "doctored" a few as well. All have been big hits with my family. I especially liked the guides for each different food group. It takes a lot of the guess-work out of making up my own recipes. This is a book I will use for years to come!

Excellent Book for First-Time Users
I'm glad I bought this book soon after buying a new convection oven. It contains many useful tips and recipes.

Great for beginners & experts alike
Very informative book. Whether you are just beginning to cook w/ convection or you are an expert who wants to try new things, this is a great cookbook, lots of variety. It offers many tips and detailed instructions. I have searched for convection oven cookbooks, and can attest that they are pretty hard to find. This is one of the better ones I have found.
