Designed for baking paella, this wide, shallow pan comes with a lid so it can also be used for braising on the stovetop or in the oven. It makes a perfectly good roasting pan as well. And, at 14 inches in diameter, it's wide enough to sauté or fry lots of chicken, fish, or vegetables on the stovetop. Though it's not nonstick, like some Calphalon cookware, the matte-finish pan is anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. Textured handles of cast stainless steel resist heating on the stovetop and go safely into the oven.
