It comes with a nonstick rack that lifts food off the pan's bottom for uniform, all-around roasting while preventing a turkey's back from boiling in pan juices. Because it's nonstick, the rack won't pull off pieces of the bird's browned skin. Made of anodized aluminum, the pan is harder than steel and conducts heat evenly whether it's baking lasagna or caramelizing a roast's pan juices.
