Makes Great Yoghurt
I recently (7-22-10) purchased a "used" (accurately described by the Amazon seller as being "as new,") Waring Pro YM350 Professional Yogurt Maker. I put all the relevant parts through the dishwasher to discourage the wrong bugs, then followed one of the recipes given in the accompanying booklet. The result: great yoghurt--the machine worked perfectly. I reviewed yoghurt makers, and the point that sold me on the Waring is the fact that it supposedly maintains a steady, ideal temperature during the entire incubation. The results tend to affirm this fact, though I did not check it directly myself.
This machine can also make excellent smoothies
So far, I have been very happy with this machine despite hearing many people saying that the Waring Pro yogurt maker makes liquid like yogurt. Actually you can make really nice smoothies out of it where you can basically eat it plain or by adding your favorite organic jam and/or agave. Well, Yummy!!! the whole family loves it and now I make yogurt every 2-3 days. For those of you who like thicker yogurt, add some dry milk and let it ferment longer. I love making yogurt on the Waring Pro and to make it healthier I bought 7 small glass jars instead of using the plastic ones that came with the unit.
Temperature runs way too high...
First off, I saw the price here - and blinked. I found the same machine at Tuesday Morning - for $29.95.
I made one batch of yogurt with the ym350, but I had to plug it into an inline (plug-in) dimmer switch to pull it off, because the remote temperature probe I used to monitor temperature went to 132 degrees - and was still climbing - before I unplugged the machine and went to home Depot to buy the dimmer switch.
The correct temp for fermentation of yogurt is 110 degrees, if you want to end up with live cultures - which is the whole point.

I had tried making yogurt before and it never worked well for me. With this appliance, it is easy, convenient and delicious.
It will take a while before it pays itself back, but now I know exactly what goes into my yogurt; 10 hours for 2% milk or 8 hours for whole milk is all it takes, so it is ready overnight. I add a little bit of sugar with the culture instead of doing it after the batch is done, I have discovered that I can use much less sugar this way and the cultures take a better flavor in the lightly sweetened milk.
The instructions say that you should use store-bought starter or yogurt every time, but in reality, if you consume it quickly enough and don't let it sit in the refrigerator for more that 3 or 4 days, you can continue to use some of your previous batch as starter for a very long time.
I usually add the fruits when ready to eat the yogurt, many fruits are acidic and will sour it if added and left on their own.
Perfect Yogurt Every Time
Once I figured out the ingredients, steps and timing that worked for me I've been able to produce consistently excellent batches of yogurt just the way I like it, mild, thick and creamy. I replaced the plastic jars with glass, 1 cup canning jars and that works great.
I microwave 48 oz. milk for 15 minutes and then let it cool on the counter. When it's cool I thoroughly whisk in a 6 oz container of Clover plain low fat yogurt and 2 T of powdered milk then pour it into the jars, set the timer for 8 hours.
